Ingredients:
sweet potatoes - as many as you want
brown sugar
butter
marshmallows - small ones
Directions:
- wash your sweet potatoes very well (remember we're not peeling off the skin)
- cut the sweet potatoes into small pieces...not too small, maybe around 2 inches in diameter..set aside
- mix butter w/ brown sugar (i just made half a cup for 3 big pieces of of sweet potatoes and i just put like 1.5 tbsp of brown sugar or until sweet enough)
- make sure you melt the butter and sugar very well (microwave it for a bit if needed)
- now what i do is i dip each one of the sliced sweet potatoes on my mixture and i put it in a baking pan...
- after which i pour the remaining mixture on top of the sweet potatoes
- put some marshmallows on top of each sliced potatoes or you can sprinkle it with cinnamon powder
- cover the baking pan with a foil
- bake for 40 min at 400F
serve in a small bowl and add a few marshmallow for toppings....
Side Story:
i have a thanksgiving hang over and i was craving for baked sweet potatoes so i baked a small tray for myself....yeah, for myself, i'm living all by myself remember?
anyway, this is easy.... i just asked my co-worker how to make this while we were at 309 on my 15-minute ride home
